Keeping it good once it's open
A litre takes most families a few days, and this is where fruit drink differs from a soft drink. It doesn't go flat — it goes off. Four things make the difference:
Refrigerate it as soon as you open it, and put it back after every pour. Left on a counter through a warm afternoon, a fruit drink starts to turn far quicker than most people expect.
Pour into a glass rather than drinking from the bottle. Drinking straight from the neck introduces bacteria from your mouth into the whole litre, which is the single fastest way to shorten its life.
Aim to finish it within two to three days of opening. Keep the cap on tight in between.
Trust your nose. If it smells sour or sharp, tastes slightly fizzy when it shouldn't, or looks cloudier than it did, pour it away. A faint fizz in an opened fruit drink means it has begun to ferment.
Serving
Always cold. Four glasses from the litre, or six over plenty of ice. A squeeze of lime cuts the sweetness and makes the mango taste fresher.
Blended with plain yoghurt and ice it makes about six glasses of mango lassi — a litre to roughly 500g of yoghurt, with a pinch of salt rather than extra sugar.
Storage before opening:
Unopened, it's shelf-stable. Keep it somewhere cool and dry, out of direct sunlight, and check the printed date when it arrives. No need for the fridge until you open it, though it's worth chilling a few hours before you want to drink it.
