Thawed paratha goes limp, the layers stick together and it fries rather than puffs. Heat a tawa or flat pan over medium heat. Put the frozen paratha on, and after about a minute you'll see it start to lift in patches. Add a little oil or ghee around the edge, turn it, and give the second side a similar time. The outside browns before the inside has warmed through, so you end up with a paratha that looks cooked and is cold and doughy in the middle.
