There's a moment in a heavy Bangladeshi meal — three bites into the biryani, or halfway through a plate of fried chicken — where cola stops helping. It's sweet on top of rich, and what you actually want is something sharp. That's Clemon's job. Sharp lemon, hard carbonation, no caramel weight to it. Akij Food & Beverage have been making it long enough that most people here have a fixed opinion about whether they're a Mojo person or a Clemon person, and plenty keep both in the fridge for different meals. Citrus or cola: They're not interchangeable, and the difference is in what the food needs. Cola has caramel depth and a rounder sweetness. It suits burgers, barbecue and anything smoky, where sweetness against char is the point. Clemon brings acidity instead. Acid cuts oil and resets your palate between mouthfuls, which is why lemon works better than cola alongside biryani, spicy snacks, seafood, singara and anything heavily fried. It's also the better choice on a hot afternoon, when cola can feel cloying and citrus doesn't. If you're ordering food in for a group, a mix of both is more useful than two bottles of either.
